Die Ernte 2024 ist abgeschlossen.

Empfehlungen für den Weinausbau der 2024er Weine und für das folgende Fassweingeschäft:

Weine VEGAN ausbauen
Kein Einsatz folgender Zutaten/Behandlungsmittel (Ausschlusskriterium für den Kauf von Weinen für manche Kellereien): RTK, Calciumsulfat (E 516), Citronensäure (E330), Kaliumsorbat (E 202), Lysozym (E 1105), Dimethyldicarbonat (DMDC – E 242), Gummiarabikum (E 414), Hefe-Mannoproteine, Kaliumpolyaspartat (KPA – E 456), Fumarsäure (E297)
Empfehlungen bezüglich Anreicherung (Zielalkoholgehalt) und sonstigen Markteinschätzungen (z. B. Einteilen der Qualitätsstufen, ob besser WH oder Rotwein etc.) geben wir Ihnen gerne telefonisch.

Zum Weingesetz

QbA = 10.500 Liter/Hektar

Landwein = 15.000 Liter/Hektar

Grundwein = 20.000 Liter/Hektar

Grundlagen aller Most und Traubengeschäfte im Herbst:

Alle Moste müssen VEGAN sein -> Verzicht auf tierische Produkte
Grenzwert der flüchtigen Säure für die Warenannahme 0,3 g/l
Trauben werden mit dem Faktor 0,78 umgerechnet
Von Traubenmost findet keine Umrechnung mehr zu Wein statt (1:1)
Bitte beachten dass alle Moste „frisch“ und nicht gärig geliefert werden müssen
